Is there an easy place to tap into to check oil pressure? There is something that looks like a sending unit below the carbs, is this for an oil light?
What should the pressure be?

I believe you are looking at the neutral switch that turns on the green light. The engine is ball bearing so little pressure is needed, unlike an automobile engine where there is a necessary film of oil between shell bearings and rotating objects.

If memory serves me right the XS650 is a low pressure high volume oiling system which not very well suited to a "Oil Pressure Light" application. I think it would require drilling and tapping an oil gallery in the clutch side case near the oil filter to attach a pressure gauge.
