Does anyone know what size tap I need to retap the mirror mount on a stock '75 master cyl? Thanks.

Those master cylinders are made of pot metal. If the hole is stripped, I'd bet you're either gonna helicoil the hole or buy another master cylinder. My guess is that the mirror stud is 8 mm in diameter. You can get a thread gage at the hardware store or the auto parts store for six or seven bucks. They're handy to have around

Good chance its a 10mm LEFT hand thread ... I have no idea about a 75 ... but I can tell you the right hand mirror mount on a 78 is a left hand thread.
