I am seriously considering chopping my '80, want the old school chopper look and haven't a clue where to start. Are there kits for this?

just look around at pics and decide where you want to go from there. the term "old school" is very over used and the meaning has become pretty diluted. Go with what your taste is in bikes. Look at mags or on the internet something will jump out at you for sure!

There are companies that you can find on the internet that will hardtail your frame, so your numbers remain intact, or I have seen some that are making complete hardtail frames to use, but usually insurance costs more on a special construction titled bike, at least in my neck of the woods.
Although I have had no dealings with this company, they offer a "hard-tail" your frame service on E-bay and they have 100% rating:

Good luck on your project.
