Sometimes my clutch seems to slip if I roll on the throttle when traveling about 4,000 - 4,500 rpm. Any ideas for whether this is likely fixable by adjusting the clutch cable or does it sound like the clutch has had it?

Also, my tach needle doesn't want to go above 5,000 rpm, though the motor sounds like it's moving higher. Anyone had a similar experience?

Most likely,the clutch springs that ride in the pressure plate have lost their tension not allowing full clutch engagement at higher engine loads. You can purchase 10% higher tension springs from either 650Central or Mikes XS...........Jack

Mine does the same thing in 5th gear at full throttle above 75 - 80 mph, at least thats the only time I notice it. Although I can still get the front wheel of the ground in 1st as long as my tire hooks up. Same issue? Mine is an 80 model original clutch springs.

As Jack says, wornout springs are a common problem. Using incorrect oil causes trouble too. Most auto oil will make a wet clutch slip.

Rub the steel plates on a rough surface like a brick or cement.
Old Yamaha trick that usually works good.
