I am thinking about swapping out my original handlebars with something a bit more relaxed. I am looking for that lazy, laid back chopper feel without actually chopping it. I guess my question is how much of a hassle is it to swap out handlebars?

It's easy unless you go with ape-hangers in which case you will find that all your cables, lines, and hoses are too short.

internal or external wiring? like TT said fairly easy unless you go apes**ters (did I spell that wrong? nyah)
